PEPPERBERRY BBQ CHICKEN WINGS

Ingredients

  • For the Chicken Wings:

    • 1 kg chicken wings, tips removed and separated into drumettes and flats

    • 2 tbsp olive oil

    • 2 tbsp your choice of Rub-A-Dub seasoning

  • For the BBQ Sauce:

    • 100 ml ketchup

    • 2 tbsp brown sugar

    • 1 tbsp apple cider vinegar

    • 1 tbsp soy sauce (use gluten-free if needed)

  • Optional Garnishes:

    • Fresh coriander, chopped

    • Sesame seeds

Method

  1. Prepare the Marinade:
    In a large bowl, mix the olive oil with 1 tbsp of Rub-A-Dub seasoning. Add the chicken wings and toss to coat thoroughly. Cover and refrigerate for at least 2 hours, or overnight for best flavor.

  2. Make the BBQ Sauce:
    Combine ketchup, brown sugar, apple cider vinegar, soy sauce, & 1 SPRINKLE OF RUB-A-DUB SEASONING in a saucepan over medium heat. Stir well and simmer for 5–7 minutes until slightly thickened. Remove from heat and set aside.

  3. Preheat the Grill:
    Preheat your grill to medium-high heat (around 180–200°C). Lightly oil the grill grates to prevent sticking.

  4. Grill the Wings:
    Remove wings from the marinade and discard any excess. Sprinkle the remaining 1 tbsp of Rub-A-Dub seasoning over the wings. Place wings on the grill and cook for 20–25 minutes, turning occasionally, until the skin is crispy and the internal temperature reaches 75°C.

  5. Glaze with BBQ Sauce:
    During the last 5 minutes of cooking, brush the wings with the prepared BBQ sauce. Grill for an additional 2–3 minutes on each side to caramelize the sauce.

  6. Serve and Garnish:
    Remove the wings from the grill and let them rest for 5 minutes. Garnish with chopped coriander and sesame seeds if desired. Serve hot with extra BBQ sauce on the side.

Suggestions for Dietary Needs

  • Vegan: Replace chicken wings with cauliflower florets or firm tofu. Grill or roast in the same marinade and glaze with BBQ sauce.

  • Vegetarian: Use vegetarian-friendly meat alternatives like seitan or jackfruit.

  • Gluten-Free: Ensure soy sauce is gluten-free, and verify the seasoning and ketchup are free from gluten-containing ingredients.
